Recipe: West African Peanut Sauce with Chicken and White Rice

Ingredients:

For the Peanut Sauce:

  • 2 tablespoons of oil (such as vegetable or peanut oil)

  • 1 onion, finely chopped

  • 2 cloves of garlic, minced

  • 1 tablespoon of grated ginger

  • 1 teaspoon of ground coriander

  • 1/2 teaspoon of ground cumin

  • 1/4 teaspoon of cayenne pepper (adjust to taste)

  • 1 cup of smooth peanut butter

  • 4 cups of chicken broth

  • 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces - You can also have bone in chicken cut apart in pieces

  • 2 medium-sized sweet potatoes, peeled and diced

  • 1 red bell pepper, diced

  • Salt and pepper to taste

  • Chopped fresh cilantro or parsley for garnish (totally optional …maybe for deco)

    For the White Rice:

  • 2 cups of long-grain white rice

  • 4 cups of water

  • Salt to taste

Instructions:

Start by preparing the white rice. In a large pot, bring water to a boil. Add salt to taste and stir in the rice. Reduce the heat to low, cover the pot, and let the rice simmer for about 15-20 minutes or until all the water is absorbed. Fluff the rice with a fork and set it aside.

In a large skillet or Dutch oven, heat the oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, grated ginger, ground coriander, ground cumin, and cayenne pepper. Cook for another minute, stirring continuously to release the aromatic flavors.

Add the chicken pieces to the skillet and cook until they are browned on all sides. This will take approximately 5-7 minutes. Make sure the chicken is cooked through.

Once the chicken is cooked, add the diced sweet potatoes and red bell pepper to the skillet. Stir to combine all the ingredients.

In a separate bowl, whisk together the peanut butter and chicken broth until smooth. Pour the peanut butter mixture over the chicken and vegetables in the skillet. Stir well to combine and bring the sauce to a simmer.

Reduce the heat to low, cover the skillet, and let the sauce simmer for about 20-25 minutes or until the sweet potatoes are tender. Stir occasionally to prevent sticking.

Taste the sauce and season with salt and pepper according to your preference. Adjust the spiciness by adding more cayenne pepper if desired.

Serve the West African Peanut Sauce over the fluffy white rice. Garnish with fresh cilantro or parsley for a pop of freshness (optional).

Gather your family around the table, dig in, and savor the delectable flavors of West African Peanut Sauce and White Rice. Enjoy the heartwarming and nourishing meal you've created together!
